Indian Chicken Curry


Makes about 6 portions
Ingredients
Cury's ingredients

  • 1kg chicken leg

  • 200ml Plain Yogurt

  • 1tbsp Salt

  • 150ml Vegetable Oil

  • 1 1/2 tsp Cumin Seed

  • 1 cinamon stick

  • 6 Cardamon seed

  • 1tbsp Ginger

  • 2 pieces of Garlic

  • 3 Onions

  • 3 Whole red pepper

  • 1tbsp Turmeric

  • 2tsp Cayenne pepper

  • 2 1/2 tbsp Coriander powder

  • 1 can (400ml) of Diced tomatoes

  • 200ml of water

  • 1 tbsp Garam Masala

  • 2 Laurel Leaves



Preparation
Put the yogurt, salt and chicken in a big bowl, cover and let it rest in the refrigerator for a few hours (ideally overnight).

Cook the onion till brown
Chop in small pieces the onions, the garlic and the ginger. Put the oil in a big pot and add the cumin seeds, cardamon, cinamon sticks, red peppers and laurel leaves. Heat up under small fire so that the bottom do not burn. When it smells add the garlic, ginger and onions. Mix until it becomes golden (around 30min).

Add the powder ingredients : Turmeric, Cayenne pepper and coriander powder. Stir and add the diced tomatoes and the water. Cook for 20 minutes. Stir often.

Add the marinated chicken and cook another 30 to 40 minutes while stiring often.

Adjust the taste with salt if needed and incorporate the Garam Masala. Stir well and it's done !

Eat with Naan or rice it's deliciously spicy.

Bagel au lait de soya

Ingredients
(pour 6 bagels)

  • 375g - Farine pour le pain (en anglais "strong flour")

  • 210g - Lait de soya

  • 22.5g - Sucre Brun

  • 1 1/2 tsp - Sel

  • 8g - Levure seche

  • 37.5g - Eau chaude (35C)

  • 3tbsp de sucre ou de miel



Preparation
Melanger la farine, le sucre brun et le sel dans un melangeur.

Incorporer la levure seche et l'eau chaude pendant 5 minutes en remuant doucement jusqu'a ce que des bulles apparaissent a la surface, signe que la levure est vivante.

Faire un trou au milieu des ingredients sec dans le melangeur et y verser le melange d'eau et de levure puis recouvrir en ramenant la farine sur le dessus.

Lancer le melangeur pendant deux minutes. Durant les 20 premieres secondes verser doucement le lait de soya via l'ouverture au sommet du melangeur.

Sortir la pate du melangeur et couper en six morceau egal. Si vous etes habitue a faire du pain normal, ne soyez pas surpris de trouver la pate plus dur que d'habitude. Les bagels sont plus sec que le pain normal. Faconner six morceaux de pates en petites boulettes, le dessus devrait etre relativement lisse. Mettre les morceaux sous une serviette humide pendant 10 minutes.



Faconner les boulettes de pates en forme de bagel. Suivre la presentation video :


Mettre les bagels sur une plaque de cuisson et mettre dans un four a basse temperature (environs 35 degree celsius) entre 70 et 80% d'humidite. Laisser reposer 40 minutes. Si vous n'avez pas de four a fermentation, vous pouvez utiliser une grosse glaciere et y mettre une ou deux tasses d'eau bouillante dans le fond. Alternativement, mettre les tasses dans un sac en plastique (genre sac de vidange).

la pate gonfle beaucoup !


Environs dix minutes avant de sortir les bagels du four a fermentation, rechauffer le four normal a 210 degree. Preparer egalement une poele a frire assez grosse remplis d'eau et rajouter le miel ou le sucre.

Porter le miel et l'eau a ebulition dans la poele. BoilingY faire macerer les bagels pendant 1 minutes de chaque cote. Il est fort possible que la poele ne puisse contenir tous les bagels, il suffit alors de le faire en deux fois. Le temps d'ebulition peut etre ajuster pour changer la consistance des bagels. Plus longtemps fera un bagel plus ferme et moins longtemps (par exemple 30 secondes par cote) fera un bagel plus mou.

Eponger un peu les bagels avec un papier essuie-tout et placer dans le four pour 15 a 18 minutes ou jusqu'a ce que l'exterieur soit doree et delicieux !

Retirer du four et laisser reposer quelques minutes.

Soy Milk Bagel

Ingredients
(make 6 bagels)

  • 375g - Strong flour

  • 210g - Soy milk

  • 22.5g - Brown Sugar

  • 1 1/2 tsp - Salt

  • 8g - Dry Yeast

  • 37.5g - Hot Water (35C)

  • 3tbsp of Sugar or Honey



Preparation
Put the strong flour, brown sugar and salt in a food processor and mix together.

Put the dry yeast in the hot water for 5 minutes until bubble appears showing that the yeast is alive. Stir slowly to mix the yeast and the water.

Make a hole in the middle of the flour mix and incorporate the yeast. Bring back the side of the flour to cover the hole.

Start the food processor for two minutes. During the first 20 secondes slowly add the soy milk to the flour through the opening at the top of the processor.

Take out the dough and cut in six equal pieces. Do not be surprised if the dough seems quite hard, this is normal for bagels. Create a soft ball of each pieces and put under a wet towel for 10 minutes.



Create the bagel shape. Follow the little video presentation :


Put the bagels on a cooking sheet and put in a low temperature oven at around 35 degree celsius at 70 to 80% humidity for 40 minutes. If you don't have a fermentation unit, you can use a big cooler and put one or two cups of boiling water at the bottom and then close the lid. Another possibility is to use some sort of vynil bag (like a clean garbage bag) and proceed the same way as with the cooler.

10 minutes before taking the bagels out of the fermentation unit, start the oven so that it reach 210. Prepare a deep frying pan. fill the frying pan with water and the sugar or honey.

Bring the water in the frying pan to a boil and put the bagel on top for 1 minute Boiling (you can do that in two batch if you don't have the space in the frying pan). Turn the bagel and boil for another one minute. This will decide how soft or hard the inside of the bagel will be. If you prefer soft bagel, boil for 30 seconds on each side. For harder bagel, boil 1 minute for each side or more.

Remove the excess water on the bagels with some kitchen paper and put in the oven for 15 to 18 minutes or until the outside is gold and delicious looking.

Take out of the oven and let it cool down a little.
