Soy Milk Bagel

Ingredients
(make 6 bagels)

  • 375g - Strong flour

  • 210g - Soy milk

  • 22.5g - Brown Sugar

  • 1 1/2 tsp - Salt

  • 8g - Dry Yeast

  • 37.5g - Hot Water (35C)

  • 3tbsp of Sugar or Honey



Preparation
Put the strong flour, brown sugar and salt in a food processor and mix together.

Put the dry yeast in the hot water for 5 minutes until bubble appears showing that the yeast is alive. Stir slowly to mix the yeast and the water.

Make a hole in the middle of the flour mix and incorporate the yeast. Bring back the side of the flour to cover the hole.

Start the food processor for two minutes. During the first 20 secondes slowly add the soy milk to the flour through the opening at the top of the processor.

Take out the dough and cut in six equal pieces. Do not be surprised if the dough seems quite hard, this is normal for bagels. Create a soft ball of each pieces and put under a wet towel for 10 minutes.



Create the bagel shape. Follow the little video presentation :


Put the bagels on a cooking sheet and put in a low temperature oven at around 35 degree celsius at 70 to 80% humidity for 40 minutes. If you don't have a fermentation unit, you can use a big cooler and put one or two cups of boiling water at the bottom and then close the lid. Another possibility is to use some sort of vynil bag (like a clean garbage bag) and proceed the same way as with the cooler.

10 minutes before taking the bagels out of the fermentation unit, start the oven so that it reach 210. Prepare a deep frying pan. fill the frying pan with water and the sugar or honey.

Bring the water in the frying pan to a boil and put the bagel on top for 1 minute Boiling (you can do that in two batch if you don't have the space in the frying pan). Turn the bagel and boil for another one minute. This will decide how soft or hard the inside of the bagel will be. If you prefer soft bagel, boil for 30 seconds on each side. For harder bagel, boil 1 minute for each side or more.

Remove the excess water on the bagels with some kitchen paper and put in the oven for 15 to 18 minutes or until the outside is gold and delicious looking.

Take out of the oven and let it cool down a little.
